Mommy's Favorite Things

As a mom, there are just some things you never want to leave the house without!  I asked some mommies on my Facebook pages, Motherhood and Money and The Mommy Exchange, what was one thing that they had to have as a mom, here is what they had to say:

  1. Butt wipes/wet wipes
  2. Planner/calendar
  3. Caffeine
  4. Diaper rash cream/ointment
  5. Extra clothes
  6. Baby powder
  7. Hand sanitizer

It's a mom's duty to always think one step ahead.  What could happen.  It's always best to be prepared!  With summer vacation here, many families will be going on vacations, day trips, and lots of family events!  So from one mom to another.....make sure you are ready for anything!

What is one thing you always need with you?

What's For Dinner: Leftover Chicken

Wednesday night I roasted a whole chicken for dinner!  Of course there were a ton of leftovers!!!!  Thursday is bowling night for my hubby!  So dinner has to be quick!  So here is my Leftover Chicken Pot Pie Casserole:

Leftover chicken
Leftover veggies (broccoli, green beans, carrots, peas, etc...)
3 cups of rotini noodles (cooked al dente)
1 can cream of chicken soup (or any cream soup you like!)
1/3 cup of ranch dressing
2 tablespoons butter (melted)
1/4 cup of milk (I use 1%)
Croutons (I use the Texas Toast brand, they come in a bag, so use one whole bag)
1tsp. garlic powder
Pepper

Pre-heat the oven to 350.  Boil noodles until they are al dente.  You don't want to cook them all the way since you will be baking this dish.  Mix all ingredients together in a bowl.  Pour mixture into a casserole dish.  Sprinkle with more pepper to your liking.  Bake the casserole for 20 minutes.  The noodles should be fork tender at this point!  And viola'!  Dinner is served in less than 25 minutes!

Serves 4-6 people depending on how hungry your bunch is!!!!
